Wintertime Comfort Food

There’s nothing like the aroma of something flavorful cooking in the house to lift one’s spirits on a cold and dreary winter’s day.  Warms the house – and the spirit!

Yesterday I opted to put my slow cooker to work and try a new recipe.

I chose a recipe called Short Ribs of Beef with Zinfandel and Balsamic Vinegar from a cookbook I had gotten before the holidays.  It was fast and easy to assemble;  I loaded up the crockpot before going off to work in the morning, and anticipated the meal all day!

I’ll give you the recipe as written, and then tell you the modifications I made. (As the saying goes, “she didn’t always follow the recipe…”)

SHORT RIBS OF BEEF with

ZINFANDEL and BALSAMIC VINEGAR

INGREDIENTS:

1 8 oz. can tomato sauce

2/3 cup Red Zinfandel

1 large shallot, finely chopped

2-1/2 tbsp. balsamic vinegar

1 T. dijon mustard

4 drops hot sauce, like Tabasco

½ tsp. salt

3 lbs. beef short ribs, cut into serving pieces of 3-4 ribs

Combine the tomato sauce, wine, shallot, vinegar, mustard, hot sauce, and salt in small bowl and mix till combined.

Arrange the ribs in a 3 quart slow cooker and pour the sauce over them. Cover and cook on low for 7-8 hours, until the meat is tender and starts to separate from the bone.

Transfer the ribs to a platter and set aside. Cool the sauce until the fat congeals on the surface. Remove and discard the fat.

When ready to serve, return the ribs to the sauce and reheat in a 300° oven until hot. Serve immediately.

Changes I made:

  • browned the ribs under the broiler to seal in the juices before putting them in the slow cooker
  • used a 12 oz. can of petite diced tomatoes in place of the tomato sauce (it’s what I had)
  • cut 2 large shallots into chunks (wanted a chunkier sauce)
  • added a healthy dash of worcestershire sauce in addition to the other flavorings

To accompany the short ribs, I made a puree of sweet potato with maple syrup, a touch of butter and salt, and a little milk.  For a  green veggie, I chose peas that I had frozen from last season’s garden, and warmed a hunk of onion baguette from the market.

The sauce from the dish was quite flavorful and had a nice piquancy to it.  (could be thickened if desired)

I had made Dried Cherry – Almond Biscotti over the weekend and served them with fresh coffee.  Gotta satisfy that sweet tooth!  (email me if you’d like the biscotti recipe)

All in all, a fine repast!  Comfort food, easily prepared – satisfies the appetite and the psyche.

OK, so it hasn’t been easy, but I am beginning to feel accomplished – well, at least in this one aspect.  The room is starting to look like something.  I actually used the work table at it’s new height to trim photos of “the kids”, aka Hannah and Jack, for my “Grandma’s Show and Tell” photo album.  I’m ashamed to say I’ve had the album a year – empty!  Not from a lack of interest, mind you, but not having the space to do it right.  And now, I do.  Pretty much.

The table is from IKEA, part of the Galant WorkStation series.  The legs can be adjusted in height to fit the intended use.   The “barstool” and bookcase (which fit nicely under the table) are from IKEA as well.  And not to forget these nifty file drawers for all that little stuff that seems to accumulate. (paper clamps, rulers, pens/pencils, etc.)  Check them out …..

A few more days and all the essentials will be in place.  Then comes the arduous, but necessary, task of weeding through the “piles of files” – garden, paper projects, travel, sewing, recipes, and more.  I don’t totally mind the task but it is time consuming.  A great winter project, and it appears like we’re going to have plenty of winter weather to endure…..

Progress on the Path to a Home Office

I cranked up the music, as well as the heat, and just got to it!  If you’ve read my previous posts, you know I’m a collector.  I don’t throw a whole lot away if I can think of a potential present or future use for any given item.  The pile I accumulated in this space was no exception.  And it takes time to weed out the good, the bad and the ugly.  I’ll come across a greeting card or a quote that I’d saved, and it would take me back.   I’d stop to reminisce, to ponder, to evaluate.  I’d stop for a hot cup ‘o joe and a shortbread cookie.  All good things take time!

But there is progress to report, quite a bit in fact.  I started with my desktop, put my laptop in place and hooked up a new printer, wireless.  the desk and chair were antiques I had purchased some years back at auction.  The desk has a pull out drawer which is great for expanding my work space when needed.  I found some cool red leather file organizers from one of my outings to Marshall’s, one of my favorite haunts.  They’re perfect for my Anne Taintor folders, which I love.

Here’s some more detail…….a few personal effects, a picture of Dad from long ago, a cast iron bird.  The two galvanized drawers worked perfect for post-its notes.

I put some artwork on the walls, writing/cutting implements in an old sectioned carry crate, and BINGO! one corner is complete…  Now, I can actually sit at my desk, and FUNCTION!  How sweet it is…

The Three R’s – 2009 Style

Welcome to the new year! My hope for you is that it surpasses your expectations, despite the negativity that’s easy to find around us.  I think we should seize the moment and turn it around to one of positive energy, pervading our thoughts, lives, and “nests”.  I think we should let this energy run rampant and spread it to all the people we know.  Maybe it’ll catch on, even if just in little increments.  It’s a chance I’m willing to take!

No long winter nap for me – I’ve committed to the three R’s, and more.  Not the classic school-book style, but in ways I can better my life and surroundings.

For starters, I’m going to RECLAIM the room on my second floor that is meant to be my home office/studio but is now little more than a junk pile.  As I unpacked my wordly goods, anything I hadn’t yet found a home for was placed (!!) in this room.

The room is amply sized and has good “bones.”  There are windows on three walls, nice hardwood floors, two little storage closets under the eaves, and a clothing closet, which also has kind of a hidden storage area behind it.  It’s not an easy area to get to, but will serve well for holiday decorations that only have to surface once a year.  I also have a few nice pieces of furniture in place, begging for organization and purpose.  And some great storage boxes and decorative elements I’m anxious to use…..for example, here’s a bulletin board I have in the kitchen that may need to find a new home in this room.

Because January is “National Get Organized Month”, I think I will jump on that bandwagon and create an home office / studio that I can actually work in.  Novel approach, huh???  About time, I say!!

No small undertaking, but the RESULTS will be far reaching as to the impact of my appreciation of the space and the dimension it will add to my level of productivity and sense of organization (REVITALIZATION).  And think of what I can create in an organized space!  Drop back in a day or two to see my progress….the work commences tonite.  And, once I get started, it takes a lot to stop me!
